Jambalaya Pasta

If you love jambalaya and are a big pasta fan then this recipe is for you. The good thing about this dish is that it doesn't take as long to prepare as regular jambalaya does so you shouldn't be in the kitchen for too long. To start, add oil to pan over medium high heat and add 1/2 pound sliced smoked sausage, 1/2 pound diced chicken breasts, 1 diced onion, and 3 diced bell peppers. Season with 1-2 tsp of cajun seasoning. Cook until it is lightly browned. Add 2 cups of chicken broth, 1/2 cup heavy cream, 8 oz penne pasta and 1/2 tsp of cajun seasoning. Stir to combine and bring to a boil then cover skillet and remove heat to medium low. Simmer for 15 minutes. Remove from skillet and stir in 1 cup monterey jack cheese. There you go a fast and easy dish for the jambalaya lover in you.
