Chicken and Veggies Quinoa skillet

Here's a healthy recipe for a nice change. I normally don't cook super healthy but this one is solid and good for you too. First cook 1/2 diced onion over medium heat for four minutes. Add 1 diced red pepper and saute for 3 minutes. Add 1 pound of diced chicken and saute for 5 minutes. Sprinkle with some salt/pepper for flavoring. Add 1 cup uncooked quinoa along with 1 cup water and stir. Bring to a boil and reduce heat to medium low and cook for a total of 12 minutes. Add 1 zucchini quartered and 1/2 bunch of chopped broccoli. Stir and cook over medium low heat for 15 minutes. There you go a healthy dish for all my health conscious friends out there. Enjoy!
