This is actually one of my husband's favorite dishes and the good thing is that it should only take you about 35 minutes total to prepare this dish. First, saute 1/2 diced onion for about 4 minutes over medium heat. Now add 1/2 tsp cumin, 1.5 tsp garam masala (delicious Indian spice), and 2 tsp of curry powder. Mix all seasonings with the onion well. Place one pound of skinless chicken thighs in the pan and brown on both sides for about 4 minutes. Once chicken is browned, add 1 chopped tomato, 3/4 cup water, and 1/2 cup coconut milk. Mix all ingredients well and simmer on low for 20 minutes. Now add 1 large diced potato and simmer covered for 10-15 minutes. There it is chicken curry with potatoes and coconut milk I am sure you will enjoy.
