Chicken Thighs with Chickpeas and Tomatoes



Now this is a pretty healthy dish that is also not too time consuming and doesn't make you feel guilty when you are eating it. As I am sure you have noticed by now I am a chicken thigh girl. I love the dark meat as I find it to be much more flavorful than chicken breasts. First, season one pound of skinless chicken thighs with some salt and pepper. Cook over medium-high heat for about 4 minutes per side. Reduce heat to medium and cook one diced onion for about 5 minutes. Add in one can of diced tomatoes, one can of chickpeas, 1/2 cup water, and some of your favorite hot sauce for extra flavor. Reduce to a simmer and cook thighs no more than 30 minutes total.
