Easy Beef Enchiladas



Now here is a super simple recipe for some yummy beef enchiladas. This recipe shouldn't take you any longer than 45 minutes of kitchen time. First, preheat the oven to 375 degrees. Pour one cup of red enchilada sauce in bottom of a baking pan. Heat oil over medium high heat and add 1 pound of ground beef, 1 can diced green chiles, and salt and pepper to taste. Cook until browned. In a large bowl, combine beef with 1/2 cup of monterey jack cheese and 1/2 cup cheddar cheese. To assemble, lay flour tortillas on a flat surface and spoon 1/4 cup of beef mixture in the center. Roll tortilla and place seam side down. Top tortilla with red enchilada sauce and more of the cheddar and monterey jack cheeses. Bake for 20 minutes. Garnish with cilantro or diced tomatoes if desired.
