I know I know jambalaya requires so many different ingredients that it can get pretty pricey but once in awhile it is good to treat yourself and your family to a dish like this one. First, melt 2 tbsp butter and one tbsp vegetable oil in a skillet over medium high heat. Add 2 diced boneless skinless chicken breasts and 1 pound sliced andouille sausage and cook for 5-6 minutes. Remove from pan and set aside. Lower heat to medium and add 2 tbsp butter to cook 2 chopped celery ribs, 1 chopped onion, and 1 chopped green pepper. Cook for 7-8 minutes until tender. Add one 28oz can of crushed tomatoes, 3 cups chicken stock, 3 tbsp creole seasoning, and 1 tbsp hot sauce. Cook for 5 minutes and then add 2 1/2 cups long grain rice and cook for 15 minutes. Add chicken and sausage back to pan with one pound of shrimp and cook until all cooked through.
