Penne pasta with Tomatoes/Spinach




This recipe is great for a person who lives a busy life and doesn't want to spend more than 20 minutes total in the kitchen. First, cook 1/2 pound of penne pasta in salted water. Cook one diced onion over medium-low heat for about 5 minutes. Add one can of diced tomatoes, 1/2 tsp dried oregano, pinch red pepper flakes and salt and pepper. Stir all ingredients together. Now add 2 tbsp tomato paste and 1/2 cup water to skillet and stir until the paste is dissolved. Then turn heat to low and add two ounces of diced cream cheese to skillet. Now use a whisk to stir the cheese until it is fully melted. Add 1/4 cup Parmesan cheese and whisk again. Add 1/2 bag fresh spinach and stir until it is wilted about 3-5 minutes. Finally, add pasta to the creamy sauce.
