Every now and then I decide I am going to cook a healthy dish and that is when I turn to Skinnytaste. They have tons of healthy dishes that are pretty delicious as well. Here's a creole shrimp dish that I enjoyed making a few weeks ago. In a large skillet heat oil over medium heat, add 1 chopped onion, 1/2 chopped green bell pepper, and 1/2 cup chopped celery. Saute until soft. Add 1 can of diced tomatoes, 8 oz tomato sauce, 1 bay leaf and bring to a boil. Cover and reduce heat to low and simmer for 20-30 minutes. Make a slurry of 1 tbsp flour and 2 tbsp water and stir into the tomato mixture. Continue cooking for 5 minutes. Season one pound of shrimp liberally with cajun seasoning and place into the tomato mixture. Add 2 tsp Worcestershire sauce and a dash of hot sauce and cook for 5-6 minutes until the shrimp is cooked through. There you go a delicious shrimp dish with not too many calories you have to worry about.
