Here is another Skinnytaste recipe that is sure to wow and has less than 250 calories per lasagna roll. First, preheat the oven to 350 degrees. Combine one 10 oz package thawed and drained spinach, one 15oz can of ricotta cheese, one large egg, 1/2 cup Parmesan cheese and salt and pepper in a medium bowl. Pour one cup of tomato sauce in the bottom of a baking dish. Cook lasagna noodles in salted water for at least 10 minutes. Roll out noodle and spread 1/3 cup of ricotta mixture over the noodle. Roll and place seam side down. Ladle tomato sauce over each individual lasagna roll and sprinkle with mozzarella cheese. Bake for 40 minutes covered in aluminum foil.
