Tres Leches Cake


If you are a fan of tres leches cake then you will absolutely love this recipe I found off the Food Network Channel. I will warn you in advance though that this dessert is time consuming to make so you should probably attempt this on a day that you have a lot of free time. First, preheat the oven to 350 degrees. Then, mix 1 1/2 cup flour and one tablespoon baking powder in a medium bowl. Set aside. In a standing mixer, whip 4 egg whites until frothy. Gradually add in 1 1/2 cups sugar. Beat in the 4 egg yolks one at a time. Add the flour mixture in three additions alternating with 1/2 cup whole milk in two additions. Pour the batter into a baking pan and bake for 30 minutes and cool cake slightly for about ten minutes. Now, pierce holes with fork into cake. Mix one can of sweetened condensed milk, one can of evaporated milk, and 1 cup heavy cream in a medium bowl. Pour the mixture over the cake while warm. Cover and refrigerate for about 3 hours. Combine the remaining one cup of heavy whipping cream and 1 tablespoon powdered sugar and mix using an electric mixer. Spread whipped cream as icing on top of tres leches cake. Sprinkle with ground cinnamon if desired.
