I used to love watching the Neely's on the Food Network channel back in the day and that was when I discovered this amazingly cheesy lasagna recipe. Now remember since this is lasagna it is time consuming but the time spent in the kitchen is well worth it because I have received nothing but praise whenever I make this recipe. First, preheat the oven to 375 degrees. Next, cook the lasagna noodles in salted water. The original recipe says to use no boil lasagna noodles but in my experience it is worth taking the extra 10 minutes to actually boil the noodles. Trust me on this one! In a large saute pan, brown one pound of ground beef with one diced onion over medium high heat. Once browned, add in one can of stewed tomatoes (14 oz), one can of tomato sauce (8 oz), and one small can of tomato paste (6 oz). Cover and simmer for 15 minutes. In a large bowl, whisk together 2 large eggs, 2 cups cottage cheese, 1/2 cup grated parmesan, parseley, salt and pepper to taste. Spread a little of the meat mixture in the bottom of a baking pan and then layer with lasagna noodles. Spread half the egg/cottage cheese mixture then top with 1/2 bag of shredded mozzarella and shredded cheddar cheese. Pour the remaining half of the meat sauce on top and repeat layering in the same order. By the end of it you will have used the entire bag of both the mozzarella and cheddar cheese. Remember I wasn't lying when I said this dish is extra cheesy. Finally, bake for 30-35 minutes.
The mixture of exotic cheeses is what really makes this lasange special. My all time favorite dish!
