These can be time consuming but worth every minute of work. I suggest making these on a weekend or a day you are working from home. First, brown ground beef. Once browned, add a can of diced tomatoes and a can of black beans. Simmer on low for twenty minutes. Then add one can of corn. Simmer on low for five minutes. Cut 3 red peppers in half and fill with the meat mixture. Pour 1/3 cup chicken broth to bottom of baking pan. Place peppers with meat mixture on top. Bake covered with aluminum foil at 350 degrees for 45 minutes. Remove from oven and sprinkle with some monterey jack cheese. Bake without the foil for an additional five minutes. Voila the best stuffed peppers you will ever have.
