I have tried several different beef stew recipes and am usually disappointed but this one by Delish will not disappoint so give it a try. In a large pot, over medium heat add 1 tbsp vegetable oil. Add 2 pounds chuck stew meat cubed and cook on all sides for about 10 minutes. Transfer beef to a plate. In same pot, cook 1 chopped onion, 2 carrots peeled into rounds, and 2 stalks chopped celery until soft about 5 minutes. Season with salt and pepper. Add 1/4 cup tomato paste and cook for 2 minutes. Add beef back to large pot and add 6 cups low sodium beef broth, 1 cup red wine, 1 tbsp worcestershire sauce, 1 tsp dried thyme, and 2 bay leaves. Bring to a boil and then reduce to a simmer. Cover and let simmer until beef is tender about 30 minutes. Add 1 pound baby potatoes halved and simmer covered for about 15 minutes. Remove bay leaves and stir in 1 cup frozen peas. Cooked until warmed through about 2 minutes.
