This was my first attempt in over 5 years to make chicken parmesan and this recipe came out absolutely divine. First, season 1.5 pounds chicken breasts with salt and pepper to taste. Set up three large bowls, in first pour 1/2 cup flour. In the second, beat 2 large eggs with a fork. In the third, stir together 1/2 cup panko breadcrumbs and 1/3 cup parmesan cheese. Working with one chicken breast at a time, dredge in flour, tapping off any excess. Then dip into beaten eggs. Finally dip in breadcrumbs turning a few times to get a good coating. Fry chicken breasts in olive oil over medium heat and saute 4 minutes per side or until golden brown. Pour 2 cups of marinara sauce around the chicken and spoon some onto the center of each chicken breast. Sprinkle mozzarella cheese over the chicken breast and bake uncovered at 400 degrees for 20 minutes. Garnish with chopped basil if desired.
