Lomo saltado

This is my favorite Peruvian dish of all time it is simple to make and so very delicious. First, marinade your favorite cut of steak and slice on a vertical into thin pieces.Marinade the steak liberally with soy sauce and place in the fridge for a few hours. Later on, fry a package of frozen steak fries over high heat with plenty of vegetable oil for a few minutes. In a separate pan, fry the steak over high heat as well for a few minutes until cooked through. Take one thinly sliced onion and 3 thinly sliced tomatoes and pan fry over medium heat for about 4 or 5 minutes until soft and translucent. Now, add your steak fries, steak and sliced veggies together and pan fry for a few additional minutes. Add a small tbsp of white vinegar and chopped parseley if desired.
